Olivares Monastrell sweet wine, the Bodegas's signature dessert wine, is a naturally sweet wine with character and personality that is made from a selection of overripened Monastrell grapes from the estate's oldest, unirrigated vines.  A vineyard located in the site of "Hoya de Santa Ana" in the municipality of Tobarra, at an altitude of over 800 meters above sea level, the highest point in the DO. Surrounded by Mediterranean forest and with poor, sandy-loam soil, the Monastrell grape finds here the perfect place for its development.

The wine is produced only in those vintages with good climatological conditions, about 5 to 6 times every decade. A wine that was first produced every year for the family's own consumption alone. In 1998, it was introduced to the market, quickly achieving great success and becoming a reference for sweet red wines.

Production:

Harvested by hand. Vinified with indigenous yeasts, long macerations of more than 30 days, and partial fermentation in stainless steel. Aged unoaked for 2 years in tank and in bottle.

Residual sugar: 211 gr/L.

Tasting Notes:

Monastrell at its best, with great concentration, persistence, and balance. Dark purple in colour. Intense nose reminiscent of blackcurrant and blueberry jam, floral notes with liquorice aromas of ripe black fruit such as plums and blackberries. Entry in the palate, powerful, ample, and sweet, without losing its freshness due to its subtle minerality and good acidity.

BODEGAS OLIVARES    


The Olivares family still runs the family winery founded in 1930 by Pascual Olivares. The founder of the winery believed in the special qualities of of the Monastrell variety to adapt to poor soils to produce wines that reflect the essence of the terroir where he was born and raised in.

It began with small-scale production, which the succeeding generations have continued to produce, expanding the family business by increasing sales both nationally and internationally.

The 275-hectare estate is comprised of a singular soil type, situated at an altitude of over 800 metres, the highest point in the DO. The estate benefits from a climate with abrupt seasonal changes, where unique ungrafted vines grow in a resistant and enduring vineyard located in the municipality of Tobarra, "Haya de Santa Ana".
