Dolç de Foc Espurna is the second wine from the Dolç de Foc project. The "Vi Bullit" the new wine created by David Seijas (Gallinas de Piel Wines), a former sommelier at the Bulli, together with Ramón Roqueta, a member of the Roqueta family (Bodega Abadal). A project created in 2016, with the aim of reinterpreting the concept of traditional boiled wine, by working on a new concept of sweet wine based on a historical recipe for boiled wine or "Vins Bullits", and bringing it closer to today's consumers, by giving it a modern personality according to current times.
Boiled wine was produced in the Masías, each one produced its own by reducing the must over a low heat for hours to produce a concentrated liquid that contained enough sugar to sweeten the boiling wine, which then fermented and rested until it turned into a sweet wine.
Production:
To elaborate the wine, they have played with the art of blending different elements, each of them contributing their unique characteristics to the final result.
On one hand, with wine that undergoes complete fermentation at a controlled temperature in stainless steel, early harvested to enhance the maximum aromatic expression and freshness. On the other hand, with boiled wine (in a conventional way), partially fermented, which provides more complexity on the palate, and the last blend, with boiled unfermented must, which adds sweetness and enhances the sensation of volume and unctuosity.
Tasting Notes:
Straw yellow color, clean and bright, with good density. On the nose, presents a wide range of aromas. On the one hand, it is fresh, showing notes of white mint, fennel and macerated citrus peel; on the other hand, it shows more matured notes, like stone fruit, peach and apricots in syrup. The palate exhibits sweetness with good weight while remaining fresh and lively due to its excellent acidity. A Perfect balance between sweetness and freshness, with a long and persistent finish.
