Production: 

The grapes are harvested by hand, followed by a careful sorting of the grapes at the cellar. Fermentation is done with natural yeast at a controlled temperature of 27ºC. The malolactic fermentation is made in 100% French oak Allier with quarterly racking. Aged for 20 months in new (30%) and used French oak allier.

 

Tasting Notes

Ripe, deep aromas of blackberries fruit and cassis, noticeable minerality with a touch of licorice and violet notes. Concentrated and flavoursome, warm, ripe fruit characters with licorice notes. Well-integrated oak with firm tannins. Long and warming finish.

Note: It is recommended to decant. This wine will keep very well during the next 12- 14 years and will improve with time in bottle.

 

Hacienda Monasterio is one of the Ribera del Duero’s stars. Its principal winemaker is the well-known Dane, Peter Sisseck (Dominio de Pingus). Founded in 1991, the estate spans 160 hectares, 78 of which are planted with vines. It is situated in the Duero River Valley in the province of Valladolid.

The vineyards are exceptionally well placed, on a north-south-facing slope, which provides excellent conditions for the proper growth and maturation of the grapes. The winery practises organic viticulture; they are environmentally friendly, no herbicides, pesticides, or chemical fertilisers are used, promoting the use of natural products such as plant extracts of Valeria, Hypericum, Milfoil, etc.
