Viñas del Cámbrico VIllanueva is a single varietal of Rufete, the native variety of Salamanca, produced and bottled by Viñas del Cámbrico, Bodegas Cámbrico.
The grapes come from a vineyard in Villanueva del Conde, planted on granitic soils and grown organically at an altitude between 750 and 850 metres above sea level.
Production:
Made naturally, with minimal intervention. Manual harvesting. Fermentation in stainless-steel vats. Aged for 10 months in a single French oak barrel. Bottled without filtering, clarification or stabilisation. Little sulfite content.
Tasting Notes:
Ruby red colour. Aromas of wild red fruits such as blackberry and blackcurrant with floral notes, hints of mountain herbs (thyme and rosemary), and a mineral background. Light and fresh on the palate. It has soft, round tannins, a good balance between fruit and acidity, and a long floral finish.
BODEGA CÁMBRICO
Bodegas Cámbrico is a project born from a strong commitment to recover the local native grapes, the Rufete tinta, blanca, or Calabrés, grapes from very old plots farmed organically.
The project was born in 1999. The man behind it, Fernando Maillo, is a native of the area and a clear defender of the centenary vineyards of the rufete grape variety. After the acquisition of old terraced vineyards in Villanueva del Conde, the winery was built in 2006, a building perfectly integrated into the landscape and maintaining ecological standards, with the cellar half buried in the mountain, which facilitates the vinification by gravity and is a perfect natural thermal insulation.
Bodega Cámbrico produces mountain and forest wines in the heart of the Sierra de Francia Natural Park. Up to this date, the winery has managed to recover 130 smallholdings totaling 11 hectares, most of which are located in the area around Villanueva del Conde, at an altitude of 900 metres above sea level. The winery works organically; all its wines are certified organic; they are made naturally with minimum intervention. Every vintage is unique and each wine wine is a reflection of each plot from which it comes.
