Vinified under the supervision of the Orthodox Union (OU). It is a Kosher wine of high certification: Lo Mebushal (not pasteurized) and Le Pessaj (suitable for Passover).
Production:
Made from carefully selected grapes from the indigenous variety Grenache, blended with Tempranillo, Merlot, and Syrah, all sourced from the Celler`s own vineyard located in the Capçanes mountains on slopes and terraces at 180–450 meters above sea level.
The grapes were hand-picked and hand-selected. All varieties have been vinified together and fermented in stainless steel tank at a controlled temperature of 26-28 ºC with indigenous yeasts and a short maceration.
Partially aged for 10 months in American and French oak barrels and partially in stainless steel tank. Cold stabilized, not fined, and slightly filtered.
Tasting Notes:
Fruity, yet elegant and light, scents of raspberry and ripe cherry fruit with hints of violet. Clean, red fruit flavors on the palate, natural acidity with overtones of oak, and soft tannins.
The Winery
Founded in 1933 by five families from the village of Capçanes, who together established a cooperative that would handle large quantities of grapes economically and efficiently. The cooperative bears the name of the village where it is located: Capçanes, a village hidden away in the Priorato hills inland from Tarragona and with a long wine-growing history.
In the 1990s, the company was reinvented as an independent company with its original members as shareholders; today, they have around 130 members and produce a wide selection of high-quality wines, including the well known Peraj Ha’abib, a Kosher wine, under the Montsant appellation.
