Production: Elaborated by the Cooperativa Agricola de Cadalso de los Vidrios under the supervision of Comando G, an innovating and well-known group of oenologist and wine growers from the Sierra de Gredos area. 

The grapes for the Syrah monovarietal are coming from El Paraje de los Pasderos, a small vineyard of just two hectares planted with 20-year-old vines growing on granitic soils at an altitude of 700 meters above sea level.

The destemmed grapes ferment in concrete tank with autochthonous yeasts at a controlled temperature, followed by 6 months of aging in concrete.

Tasting Notes:

Very clean and open; excellent freshness and fruit expression. Fresh, ripe blackcurrants and plums, slight floral notes, medium body, smooth with a silky texture, very approachable with plenty of ripe fruit and soft tannins.
