Production: 

Elaborated primarily from a selection of grapes from the youngest plantations, aged between 6 and 12 years old. Fermentation takes place in 1500 and 5000-litre stainless steel tanks for 17 days at a controlled temperature of 25–29 ºC with daily pigeage and gentle remontage.

Ageing for 14 months in 225 and 300-litre light and medium-toasted, fine-grained, 2nd and 3rd year wine French oak barriques.

Tasting Notes:   

Intense aromas of ripe black cherry, anise, and toasted, and mineral-scented nose. Full-bodied, displaying lots of spiced dark fruits on the palate, complemented by mineral and toasted flavours. Good concentration, silky tannins, and good depth.

Notes: It is recommended to decant the wine. Drink over the next 6–8 years.

 

THE WINERY

Founded in the early 1990s, Celler Vall Llach is located in the village of Porrera in the highly acclaimed Priorat wine region. 

The Celler owns a selection of magnificent old estates –known locally as trossos- planted with 60 to 90-year-old Carignan and Grenache vines and located on steep slate hillsides, receiving optimum sun exposure at a considerable height above sea level and unable to retain water.

Vall Llach cultivates their old vines according to traditional methods, without the use of machinery. Additionally, they carefully purchase grapes to complement their stocks, selecting them for their quality from some of the oldest and most reputable farms in the Porrera and Torroja areas.

In the early 1990s, the winery started with some new plantations intended to complete the cellar’s wine production. The varieties chosen were Grenache, Cabernet Sauvignon, Merlot, and Syrah. A very limited part of these varieties will then be used to complete and soften the complexities and taste of their signature wine, Vall Llach. Although mainly the grapes from these new plantations will be used for the production of the Embruix, the 3rd wine of the winery, another part, also of extremely high quality, will help to define the second house wine: Idus de Vall Llach.
