The Third of the 9+ Sparkling Selection is a 100% Cartoixà selection. A natural, Sparkling Ancestral wine without added sulphite, made from 100% Cartoixà grapes from eco-certified vines.

The Ancestral is a sparkling wine made under the ancestral method, a very old method that produces sparkling wines after a single fermentation. In the ancestral method, the must starts its fermentation in the tank, but it is bottled before finishing in order to complete the fermentation in the bottle.

The 3r Sparkling Ancestral belongs to the range of the single varietal selection wines. Produced by Celler 9+ in La Nou de Gaià, a small village in the Tarragonès area. Moisès Virgili i Rovira, a winegrower with a strong connection to and passion for agriculture since childhood, is the heart and soul behind this project, which was launched with the aim of making natural wines and giving all the protagonism to the local varieties sourced from their own vineyards.

They work 38 hectares, of which 20 hectares are planted with vines on calcareous soils. The vines are organically farmed and benefit from the influence of the Mediterranean Sea breeze.

The wines are crafted with the utmost respect for the environment and without any additives or preservatives. Only grapes!! Small productions are made.

The vineyards are organically farmed, duly certified by the authority CCPAE, the Catalan Council for Organic Agricultural Production.

Vinification:

Hand-harvested. The grapes are destemmed and pressed. Fermentation takes place in stainless steel tanks for 12 days at 14-15º. Bottled in cava-type bottles and closed with a cork stopper. The fermentation is completed in the bottle, then it is disgorged and closed with the final cork stopper. Free of preservatives and without added sulphites.

Tasting Notes:

Fine and constant bubbles, very well integrated. Fragrant nose with a blend of citrus and stone fruit aromas, complemented by subtle notes of dried Mediterranean herbs and white flowers. The palate is ample and refreshing.

It may present natural deposits.
